- ●8 oz thin sliced beef (flank or sirloin)
- ●2 cups zucchini slices or ribbons
- ●1 tbsp sesame oil
- ●2 cloves garlic, minced
- ●1 tbsp coconut aminos
- ●½ tsp grated ginger
- ●½ tsp salt
- ●Optional: chopped scallions or chili flakes

Prep beef: Pat dry and slice thinly across the grain. Season: Toss with salt, ginger, and half the garlic. Cook beef: Heat sesame oil in skillet over medium-high. Add beef and stir fry 4 – 5 minutes until browned. Add zucchini: Stir in zucchini and remaining garlic. Cook 2 – 3 minutes until tender. Finish: Add coconut aminos. Stir 1 minute. Garnish with scallions.
