- ●2 cups chopped kale
- ●¼ cup coconut milk
- ●Juice of
- ●½ lime
- ●1 tsp grated ginger
- ●1 tbsp coconut oil
- ●½ tsp salt
- ●Optional: chili flakes

Prep kale: Wash and chop. Make sauce: Heat coconut oil. Add ginger, coconut milk, lime juice, and salt. Simmer 2 minutes. Poach cod: Add fillets. Cover and simmer 6–8 minutes until flaky and 145°F inside. Sauté kale: In separate pan, sauté kale in 1 tsp coconut oil for 3 minutes. Serve: Plate kale. Top with cod and sauce.
