- ●1 cup steamed cauliflower, mashed
- ●1 egg
- ●1 tbsp olive oil
- ●½ avocado
- ●Juice of

- ●1 clove garlic
- ●½ tsp salt
- ●Optional: chopped parsley

Make cakes: Mix shrimp, cauliflower, egg, and salt. Form into 4 small patties. Cook cakes: Heat olive oil in skillet. Cook patties 3 – 4 minutes per side until golden and shrimp is opaque. Make sauce: Blend avocado, lime juice, garlic, and 1 tbsp water until smooth. Serve: Plate cakes with sauce and parsley.
