- ●1 cup zucchini noodles
- ●¼ cup coconut milk
- ●1 tsp grated ginger
- ●1 tsp olive oil
- ●Pinch of salt
- ●Optional: chopped cilantro or lime juice

Prep zucchini: Wash and spiralize. Cook cod: Heat olive oil in skillet. Add cod and cook 4 – 5 minutes per side until flaky and 145°F inside. Warm sauce: In small pan, simmer coconut milk with ginger and salt for 2 minutes. Steam zoodles: Steam zucchini noodles 2 minutes until tender. Assemble: Place zoodles in bowl. Top with cod and drizzle sauce. Garnish.
