Prep zucchini: Wash and spiralize. Sauté zoodles: Heat olive oil. Cook zucchini 2 minutes until tender. Nest and crack: Form zoodles into two nests. Crack one egg into each. Cover and cook: Cover pan and cook 3 – 4 minutes until eggs are set. Drizzle: Warm coconut milk and drizzle over nests. Season.
