Prep zucchini: Wash and spiralize. Sauté: Heat olive oil. Cook zucchini 2 minutes until tender. Nest and crack: Form zucchini into two nests. Crack one egg into each. Cover and cook: Cover pan and cook 3 – 4 minutes until eggs are set. Drizzle: Warm coconut milk and drizzle over nests. Season and serve.
