- ●4 eggs

Sauté eggplant: Heat olive oil. Cook eggplant 5 – 6 minutes until soft. Mix eggs: Whisk eggs with coconut milk and salt. Combine and bake: Mix cauliflower and eggplant into eggs. Pour into oven safe dish. Bake at 375°F for 15 – 18 minutes until set. Serve: Slice and garnish.
