- ●1 cod fillet (5 oz), cooked and flaked
- ●½ cup diced eggplant
- ●2 tbsp coconut milk
- ●1 tsp olive oil
- ●1 clove garlic, minced
- ●½ tsp salt
- ●Optional: chopped herbs

Sauté eggplant: Heat olive oil. Cook eggplant 5 – 6 minutes until soft. Add garlic and coconut milk: Stir in garlic and coconut milk. Simmer 2 minutes. Add cod: Stir in flaked cod and cook 1 more minute. Season: Add salt and garnish.
