Prep eggplant: Wash and slice into rounds. Roast eggplant: Brush with olive oil. Bake at 400°F for 20 minutes. Cook turkey: Sauté with garlic and salt until browned and 165°F inside. Layer: In baking dish, layer eggplant and turkey. Sprinkle with herbs. Bake: Return to oven for 10 minutes. Serve warm.
