- ●2 cups zucchini noodles
- ●1 tbsp grated ginger
- ●2 cloves garlic, minced
- ●1 tbsp olive oil
- ●Salt and pepper to taste Optional – chili flakes or scallions

Add coconut aminos or rice vinegar. A splash of lime juice jazzes up the dish.

Heat oil in a skillet over medium heat. Add garlic and ginger, sauté for 1 minute. Add shrimp and cook until pink (~ 3 minutes). Add zucchini noodles and stir fry for 2 – 3 minutes. Season and garnish.
