- ●1 cup zucchini noodles
- ●1 tsp coconut oil
- ●2 tbsp coconut milk
- ●½ tsp grated ginger
- ●Pinch of salt
- ●Optional: lime juice or chili flakes

Prep zucchini: Wash and spiralize. Cook shrimp: Heat coconut oil. Add shrimp and ginger. Cook 2 – 3 minutes per side until pink and 145°F inside. Add zoodles: Stir in and cook 2 minutes until tender. Add coconut milk: Simmer 1 minute. Season: Add salt and optional lime juice.
